As the second to last comment suggests, there's a truecolor mode for
pgplot, so I suggest you use that instead of pseudocolor.

The problem doesn't really exist in 2.3.1 as far as I can tell. It
looks like the user just didn't enable 256 color mode. The core of
the problem there was that the pseudocolor visual is broken in
truecolor mode.
If not, how do
I revert to 2.3.0? Can I simply install X11-2.3.0.pkg (after
X11-2.3.1.pkg
has been installed already?)

In short, go install 2.3.2_rc4 since it should not be an issue in the
2.3.2 rcs
