Since you're just looking for generic information...
I'd start by looking at
http://trac.macosforge.org/projects/xquartz/wiki/DeveloperInfo and figuring out what it took to make
X.org run in OS X 10.5. Once you understand the differences, build XQuartz from scratch for 10.5. Once that is working, switch to the iPhone SDK and build again. This will most certainly break, but it will give you an idea of how broken it is.
Another thing worth trying is looking at the packages for X that Fink offers. There's an xorg for 10.4. Can you get that package to build with less problems?
What does XQuartz link against? Maybe some libraries are missing? Are there alternatives? Perhaps you
have to write new display and input drivers (
X.org has some HOWTOs on
that). Go back to what you learned about porting
X.org to OS X and
apply that logic to the iPhone.
These are all very basic guidelines for starting any port -- not just X -- but that's about as detailed of an answer as you'll get (without violating the NDA).
