The limitation here is really the window manager that gets executed by default, namely quartzwm. You need to do a couple of things to get a full-screen xterm. First, run X11 in full-screen mode (X11->Preferences->Output, checkbox in 'Full-screen mode'. Next, you need a window manager that doesn't have any decorations, or will let you customize them. Check out ratpoison, evilwm, or even fvwm with the proper options.
