Did you logout and log back in as instructed by the XQuartz installer? If not, do that ;).
If you did logout and back in, and you're seeing this issue, make sure your $DISPLAY is being set correctly (by launchd and not clobbered by your shell scripts). The ssh debugging FAQ entry is helpful for that:

/opt/X11 correctly corresponds to /Library/LaunchAgents/org.macosforge.xquartz.startx.plist and /A/U/XQuartz.app
