Somebody pointed out to me in a private e-mail, that it probably should be 'defaults write org.macosforge.xquartz.X11 -int 72', which now works. I found the original command I used with org.x.X11 in the FAQ [1] almost at the end of page with title "Default resolution too low? Fonts too small?". Is this only different (new) for OS X 10.8?
org.x.X11 is for the system X11.app, which no longer exists on 10.8; XQuartz uses org.macosforge.xquartz.X11, and MacPorts uses org.macports.X11 (I think, by inference from other examples). Elsewhere in the FAQ you can find an incantation that will adapt to the running X11 within .xinitrc.d ($X11_PREFS_DOMAIN), but that doesn't help from outside and it's too late to set the server's DPI when anything in the .xinitrc chain runs.
The FAQ could probably use some cleaning up in this regard, as random entries use different examples.
