Getting started with using CVS in Xcode can be a bit tricky, but once
you're up and running - and are aware of the limitations of Xcodes SCM
functionality and implementation - it's usually pretty smooth sailing.
I wouldn't expect there to be any particular problems with using source
control for PHP files in Xcode, but I could be wrong.
