is there a way to customize the way Source Files are printed in Xcode, or to print all source files connected to the project? When I'm turning in printouts for classes, I'd like to be able to pick my own headers

There is no way to customize what's in the header and footer. If there's something you want there, please file an enhancement request at <http://developer.apple.com/bugreporter>.

Also, there's no way to print multiple files at once. That is a known issue though. You might be able to write an AppleScript that did it though - I haven't tried.
