According to http://www.gzip.org/zlib/index.html, zlib is already included on Mac OS X. I ran `locate zilb` and got back the phone book. Which zlib should my app link to

/usr/lib/libz.dylib

and how do I set that up in Xcode (I've only linked to frameworks to date)?

There are a few different ways:

1. Locate the file in the Finder and drag it into the project file list
2. Use the "Add existing files" command

Remember, whichever way you do this, Shift-Command-G is your friend.
