Do you HAVE to use CVS? I'm using Subversion (http://subversion.tigris.org) and it says that it has support for SSH (which handles your transport problems) and it was designed from the ground up to be a 'better CVS'. So far, I'm pretty happy with it.
One caveat though; download the latest tarball and build it yourself. The reason is that they introduced a new, better way of storing the repositories called FSFS (which is simply based on the filesystem). The version you can get from fink can only use the Berkeley (sp?) database backend, and that tends to get corrupted on an alarmingly regular basis under OS X. The FSFS backend doesn't. Write me off-list if you need help compiling it.
