You can, but why would one ask for this trouble.
Can I just do a 'make install' on some GCC-source, and then expect it
to work, or is there some other trick to be pulled in order to

Apple's version of gcc is highly specialized, so building gcc from
plain FSF sources for Mac OS X is no joy.
Furtermore - with a 'custom' GCC, could I make XCode compile my source
for other platforms (here I'm especially thinking of x86/win+linux and
the mips (PS2)?? And last, but not least, could I make XCode compile
my Java code with GCC??
For foreign targets, you can always build and use gcc like you would do
it on e.g. Linux. Just don't overwrite what came with Xcode.
For integrating this into Xcode - I'd set Xcode's build mechanism aside
and build the project using a "Legacy Makefile" target.
For better integration, you could look into how Xcode handles cross
targets - those for 10.1 and 10.2. But you want first successes this
year, don't you?
