I've looked a little more carefully, and it looks like you *can*

Instead of editing it in the "Project Info" inspector, add it in
the build settings under "Build Products Path" (SYMROOT).
Great, and thanks!
I wouldn't inflict it on the users, but it looks like you have a
way of achieving it if that's what you need to do.
In my opinion, it makes sense to inflict this setting on all users.
When there are subprojects involved, it has to be done this way, and
the developer who sets up the project in the first place isn't going
to want to answer the same question umpteen times when other
developers start using the project. Yes, a simple email could explain
what each developer needs to do, but in a cross-platform shop, the PC
developers aren't going to immediately start using the Xcode project
because they only need to build the Mac product when they've checked
in files and need to make sure they still compile on the Mac, or they
need to see how a new feature's UI looks, etc. Plus, the developer
that sets up the project should be smart enough to make the build
location relative to the source so the path will be valid on
everyone's machine (if Xcode is smart enough to create the path if
it's not already there).
Also, if a setting appears in the project settings window, then I
sure assume it's part of the project. If it's not part of the actual
project, then it should be labeled as such, or Xcode needs a User
Settings pane for this window.
