I'd suggest looking at this webpage:

http://developer.apple.com/documentation/Cocoa/Conceptual/PropertyLists/Conc
epts/OldStylePListsConcept.html

which I *believe* documents the various syntaxen that could be used, each of
which would presumably have to be passed to the defaults command as a single
argument, using whatever quoting/escaping that your shell of choice
requires.
