I have tried something similar on a PowerMac G5 and, contrary to my
expectation, it could boot (and run flawlessy) without a graphic card
too.
Accessing it with Apple Remote you could see a graphic login panel and
work on it like usual.
This was not the case with previous versions of MacOSX (at some point
we had to leave a monitor attached to some powermac in order for them
to work properly, even if the were used just like servers) but I think
that Apple Remote Desktop and XServe Cluster (where not graphic card
is supplied) have changed this scenario.
