Just FYI, I filed the following bug on XCode 2.0 today:
When inspecting a target build setting whose value has been set in a style, the setting's title has a strikethrough (nice idea) but regarding the value displayed, there are two problems: 1. it's enabled for editing, even though whatever you set there will not have any effect 2. even if you don't edit the value, the value shown is often NOT the value in effect in the style.
I can testify that this leads to a lot of newbie confusion. Unless there is good reason why not, I would say that the value displayed should be the true value (the one defined in the overriding style) and should not be editable.

The style does override the target setting. When the target setting is overridden by the style, the setting is displayed in strikethrough. Style settings are accessible in the Style panel of the info window for the Project (top) icon.
