Xcode 2.0 is much faster at most tasks. I don't know if it would

In wouldn't bet on it being enough to solve your problem. What I
would suggest that you do is:
1) Use Shark to collect information about your problem, and file a
performance bug report to Apple. Don't forget to peek in the sample
report from Shark - sometimes you can see what the problem is, and if
you're lucky it's something that you can switch off in Xcode.
2) Find a way to workaround the problem. While they certainly seem to
attempt to head in that direction, I don't expect Xcode to ever fit
every need of every developer on the platform. You should expect to
sometimes have to look for solutions outside of Xcode.
An external editor would probably be the best thing for you in this
case. Have a look at Smultron (some of my colleagues use it), BBEdit,
or TextMate - or possibly one of the UNIX thingies that Corey mentioned.
