It seems that Xcode configuration files are a 2.1 feature. Correct?

Correct.

And - reading this mailing list - I got the impression that Xcode 2.1 is somewhat less stable than 2.0. Correct?

I wouldn't go back to version 2.1 now. For all its faults, Xcode 2.1 is stable enough for production work, and the build configuration feature & new project format are big plusses. Some people have complained about the speed, but I've never had a problem with it.

So - given the fact that I am not interested in fat or universal binaries - should I upgrade to Xcode 2.1?

Yes.
