Rather than changing the default compiler via gcc_select, leave it with 4.0 and set the projects that need 3.3 to use it explicitly.

OK, I'll try, currently it's the other way: default 3.3 for some older code and I set 4.0 for new work in the project.
So the plist preprocessing is using the system default compiler, right?

Yes, and I don't think we provide a setting to change that.

OK, so filing a bug report against GCC 3.3 is useless as it has been replaced by 4.0.
Maybe a request for a documentation update?
