WTF, indeed. You'll find this and other useful settings inexplicably buried in the Expert Settings Notes, available under the Help menu.

you can also find the hidden settings to assign a sound to XCode 'build success' and 'build failure'..

(yes, I've since extracted the 'metal stamp' sound from CodeWarrior, and am quite happy now)
