There are still two "Find Selected Text in Documentation / API Reference" menu items in the Xcode 3.1 Help menu (Note that you can assign keyboard shortcuts to them if you'd like to).

You can also Alt+DoubleClick on a symbol (any word really) in the editor to look up API Reference for it in the documentation window.
