I keep closing the project window because I don't need/want it, but then it takes all my editor windows with it...is there a way I can get rid of this behavior?

Windows opened from a project are associated with that project and will close when that project is closed (and, optionally, automatically reopen when the project is reopened).

Open the file using File > Open... and it won't be associated with any project, and will be independent. Alternatively, drop its icon into the Organizer and open it from there if you're going to be using it frequently independent of a project.

Or you could simply minimize the project window instead of closing it altogether.
