I'd like to try that, but when I had only 2.5 installed at first, it couldn't find the 10.4u SDK. I was building with xcodebuild.

There was a 10.4u SDK available under /Xcode2.5, but it wasn't being
used.  Is there a way I can specify its path for command-line builds?
An environment variable maybe?

Set your SDK path to $(DEVELOPER_SDK_DIR)/MacOS10.4u.ask in order to build projects for Tiger and later on Xcode 2.5 on Leopard. As has been mentioned, it's best to install 2.5 in a directory other than / Developer.
