Thank you for your reply, but as I mentioned there is no such option available to select from a list as a drop down control or list, there is list in Valid Architectures, below Architecture row, but doesn't help.
Also there is menu item under Project in Xcode, to change the Active Target Architecture, when I select i386, still in target Info window under Build tab, the Architecture is i386 ppc.
is this a known issue in Xcode 3.0 ?

Find the "Architectures" build setting in the Build tab for the relevant target and configuration. Clicking on the value (to the right) gets you a popup that deals with 32- and 64-bits, as you say.
Double-click on the _label_. This will drop down a list of the architectures that will actually be built. Use the + and - buttons to edit the list.
