The only real difference is that when launched from Xcode the app is
run in the debugger. The oranizer window in Xcode will give you access
to the crash log as well as console output from the device.

Yes you can get the crash logs off the phone if you plug the phone
in, then go look for the device browser. You can also download a
separate device manager app, the name of which now totally escapes
me, which lets you manage provisioning profiles as well as other
device features in one place .. you can get the crash logs from
there too.
