Oh hey! Option-clicking worked! The "Set Active SDK" menu item in the "Project Menu" contained one, grayed-out item, "Base SDK". But when I option click on the overview popup-button, it lists a full complement of SDKs and showed that 10.4 was chosen. And now that I've chosen another one from there, the Project menu contains the full list too.
Thanks, I had no idea about the option clicking trick!
