Is there a "best way" to replace an expiring profile with a new one? I end up opening up the project package and deleting all the references to the old, just to make sure.

Then select Provisioning tab (assuming it is a development profile that is expiring) This will show you all the profiles and their expiry dates. By selecting the (Details) link you can see the associated application ID.
