I did forget some things that do make a difference. Building with the 10.5 SDK won't give you warnings for deprecated API. Also, some things will behave differently depending on the SDK you use, mainly for reasons of backward compatibility. For instance, look in the AppKit release notes (e.g. for 10.6 and for 10.5) and search for "linked against" for these cases. Normally it won't make much of a difference though.
