You do. Ad-hoc allows you to build an app which runs on a limited set of devices. The UUIDs are encoded into the provisioning profile you generate, if the device isn't in that list (or the profile isn't installed), it won't run on that device.
There's a 'how-to' tab at the top of the screen which is quite good, a lot better than when the provisioning portal first came out, it's got some pictures of some of the steps, if you haven't tried already, take a look.
