For the record:
While my iOS5 setup was stuck I was able to log into
https://appleid.apple.com/
and then updated my Apple ID to my primary verified email address.
Then I went back to the iOS setup and was able to login with the email
address just fine.
Such a mess with all the logins in iOS5.
