Naturally, it now appears that iTunes doesn't display the 40 digit
code that I would need to provision the device for him through the
developer provisioning portal, and Apple's docs that say "use Xcode
to get the 40 digit id" are not helpful since the guy is on the other
side of the planet.
Click on the Serial Number in iTunes and you will get the UDID that you need. It's not obvious, but the normal Copy command will copy the UDID to the pasteboard when you are in this mode.
Or try "Ad Hoc Helper" (free in the App Store). Also, Innerfence has a number of how-to pages on their website that can be customized for your app (see the "Customize it ..." link on the page) to help working with beta clients, e.g.,
