Hi Rick,
Mac OS X 10.7 introduces two new concepts that all apps should conform to - The restoration of existing user state when applications are relaunched, and autosaving of documents. Xcode adopts both of these behaviors to be a good platform citizen.
[System Preferences > General > Restore windows when quitting and re-opening apps] allows you some control over the former, but autosaving cannot be disabled. Even with autosaving you can still revert back to the original (or explicitly saved) contents of your file using [Xcode > File > Revert to Saved...].
