First off, thanks to Alex, Eeyore, and Fritz for your answers.
Indeed, attaching to the simulator as a whole wasn't productive, because it didn't show anything specific to my app (which was running).

This is what was not working. My app was not shown in this menu for some reason. It was empty.
From Xcode, "Product>Profile"
OK, this worked, and it did allow me to select Zombies (which is what I needed to run). A side effect is that my app has now magically appeared in the Choose Target menu.

I couldn't do these, because my app was missing from the menu.
So it appears that there's some defect in Instruments that causes apps to be missing from the Choose Target menu until you launch Instruments from Xcode at least once.
