Why these settings are so obtuse and hidden is completely beyond me.
For a company that champions(ed) user experience and usability, too many of its recent products (I'm talking to you Safari and Xcode and certs/provisioning) feel like they were designed by the second string of the Windows Me team.

Indeed, attaching to the simulator as a whole wasn't productive, because it didn't show anything specific to my app (which was running).

I can attach in any of the following ways:
From Instruments, select a template for iOS and then from "Choose Target>Choose Target" select my app
This is what was not working. My app was not shown in this menu for some reason. It was empty.
From Xcode, "Product>Profile"
OK, this worked, and it did allow me to select Zombies (which is what I needed to run). A side effect is that my app has now magically appeared in the Choose Target menu.
From Xcode, "Run", then from Instruments, select a template for iOS and then from "Choose Target>Choose Target" select my app
From the Simulator, start my app, then from Instruments, select a template for iOS and then from "Choose Target>Choose Target" select my app
I couldn't do these, because my app was missing from the menu.
So it appears that there's some defect in Instruments that causes apps to be missing from the Choose Target menu until you launch Instruments from Xcode at least once.
Thanks, guys. At least the logjam is broken.
