I think so. And I can't go back with iOS version in any case? This is only one way process?
If I am in 1.0 and go to 2.0, I cant go back. Even with beta version? (1.0 to 1.1 beta, I cant go do 1.0 again?)
Correct, one way only, even with betas. 1.0 => 1.1b1 => 1.1b2 => 1.1 => etc.

You would use that to restore a software image via Xcode, either to a beta iOS release or as an alternative to iTunes for release versions. There is no interaction with the simulator here. This does not allow you to restore a device to a version of iOS prior to the current release.

Only the ability to use Xcode to restore the device to that software version.
