I wouldn't personally. I want the best of both worlds, I would love to be able to run the mac in as high a res mode as I can, mostly for things like storyboards, I don't really mind if my iPad and iPhone views show up a bit small on the screen, they are large enough, putting text on buttons is a bit of a pain but I can deal with that. However I would like then to be able to pick a font you can see from the moon for my text editing and a font you can see from .. err halfway to the moon for the organizer, I wouldn't expect it to be 9pt, I wouldn't expect it to scale, I would expect to pick 15pt or something, whatever it takes given the screen resolution I chose. There are font choices for the editor and the console, it would be nice to have choices for everything (can't find any for organizer but perhaps I missed them).
What would work just as well, or possibly actually must better and more in line with the idea of retina display, is the ability to use IB when it's zoomed out. You can then run Xcode at a virtual resolution which makes sense for the text size, less than screen size, with 'normal' font sizes, but you get full resolution when you zoom IB, because you do actually have more resolution, and can actually use it without zooming it back in.
