Do you need to use the Xcode GUI in those VMs, or just build?
If you just need to build, you can use the xcodebuild tool, which won’t be affected by any graphics slowdowns.
Even if you need to do editing, you could do that outside the VM using file sharing.
Debugging might be the hardest — at one point it used to be possible to use Xcode to attach to a process on another machine over the network, but I’m not sure if that’s still supported. You might have to run lldb as a CLI.
