Thanks to everyone who gave me help on this one, on and off-list. I have more testing to do after I return home. (I did select "No Color Adjustment" and "Same as Source"...)

Perhaps the most interesting response about what the "Media Setting" controls came to me from Dan Sroka - from the Epson 9600 listserve. The information might be useful to others here, thus the cross-post. Dan has interesting info on the 76/9600 for those using it.

Just last week I talked with Epson Tech Support about this question and got the following answer. When printing with the Epson print driver (through Photoshop or whereever, any program but a RIP), the media type setting controls various things: paper thickness, suction, platen width, ink amount, and dither pattern.

When using a non-Epson paper, you need to select a Epson media that
is "most similar". First thing is type of paper: matte, gloss, etc.
Second is thickness. They do not publish this information, but Epson
Tech gave me the following tip to find out the thickness settings
their media types use:

Go to the Epson print driver, and under the "Print Settings" panel
select the Media Type you are curious about. Then, change to the
"Paper Configurations" panel. You will see a field called "Paper
Thickness", with a value (e.g. 2 for Enhanced Matt). This is the
value in multiples of 0.1mm for that paper's thickness. To determine
the value in mils, multiply that by 0.03937 to convert to inches,
then 1 mil = 0.01 inches.
