PS: Technically, the Get Info slice didn't let you set the language to use, it let you enable and disable installed ones, but given that plus the right ordering of fallback languages in System Preferences, it amounts to the same thing.

Disabling every languages minus one forces the app to run using this one even if the system is running an other one.
Of course, to do that the language must be available in the system.

I use that daily (in fact I have two copies of iWork, one running in French, the other running in English to be able to respond on the Apple Discussions forum.
In addition, I made a bit of surgery to be sure that there is no preferences conflicts between the apps.
