You're not going to find any books more recent than the ones you have. It takes a long time to update books, and often isn't worth it for small print runs.
Personally, I think you'll need to suck it up and cope with the interface changes. Things have indeed moved around a bit, and some stuff has been added, but I just went through the Hillegass book _Cocoa Programming for Mac OS X_ which had the same problem. I was able to look at the examples with the old UI and find the same functionality in the new UI. I also found that it gave me a bit more understanding because I couldn't just blindly poke the thing they showed me. I had to figure out and understand what I was looking for in order to find the proper widget. Now, granted I'm a super-genius, but so are we all simply because of our willingness to try. That's light years ahead of the average schmoo.
So don't despair. Keep at it, and if you have specific questions, ask us.
