Luc,
Mail rules (Preferences > Rules) can start a task automatically, but
they can't launch a workflow directly. They can execute an
AppleScript, so you could write a short script to launch your
workflow. Mail rules can also delete the email which triggers them.

Hi,
I receive a backup file as attachment to an email on a daily basis.
Does anyone know how to start a task automatically when receiving
the email, and how to delete the email at the end of the task?
I already have the rest of the task scheduled but I need to start it
manually and delete the email manually afterwards.
