Sounds like you're looking for tutorials rather than reference
documentation. Apple provides mostly references, and some example code.
Documentation in the form of hands on tutorials is a "third party
opportunity", and by now there a lot of good books (not just O'reilly
mind you!), mailing list archives and web sites around to help you with
that. The list archives are full of pointers to such material.
What are you looking for that you can't find in these locations?
