If it's anything like the Fiery I recently struggled with on an Epson 9000,
you still have to choose a Media Type when printing out the targets
otherwise there didn't seem to be a way of setting the resolution you
wanted.

Here's how I did it:

Using the Fiery Downloader, send the target into the HOLD queue. Then, using
their Web Spool (Web Tools?), get into the Hold queue and change the print
configuration of the target you sent in. This is where you'll see the Media
selections. This is where I chose the media I was running on but disabled
both the RGB Source and CMYK Simulation settings. Output the target, measure
and create your profile (I didn't use ink limits since I assumed the media
type was doing that for me). Use this profile as your CMYK Simulation
(ColorWise Tools will let you download the profile to the RIP). Seemed to
work OK but still struggled getting a good usable profile without the need
to edit.
