The "what" is definitely more evident in low-end scanners, but there are
also reasons for profiles with high-end. To mention a couple, if you are
scanning in RGB, the scanner profile provides the information necessary to
describe your image when you are going to view or transform it. If you want
to convert to CMYK later, you will need an input profile. If you simply
assign some profile such as Adobe RGB, you will probably not like the
results. Also, without a profile, in Photoshop you will see the image in
your RGB working space which will give different results depending on which
you have selected - AdobeRGB, sRGB, etc.
If you are scanning in CMYK with the traditional scanner separation, you
should try a job in RGB and separate with your corresponding profiles. Not
only is color management an issue, but you will also be surprised at the
increase in modulation and quality. The images from earlier jobs which were
considered acceptable will probably appear "flat" compared to this job.
To go back to something I mentioned before, however, I have not been able to
obtain the "what" without editing the scanner profile before using it.
