Thanks for all the good input on this topic!
The service bureau that I work with used to do exactly that when scanning on Eversmart for their Lambda output.
They now use an Imacon and I am not sure they still apply the CMYK process.
I never was exposed exactly the method, but they just told me that they were able to control colour saturation and the
level of black separately better that way. (The Eversmart scans into LAB space and outputs RGB or CMYK). They ripped the
data to the Lambda through a CMYK RIP. (?)
As I said before, just a matter of curiosity!
