What is a "by default color space profile"?

My results being unfortunately inconsistent from one job to another, I
wish you could give me some light on how to properly convert files in
plain RGB or CMYK values with no profile tag added.

Prior to sending files to non color managed devices for which I have no
specific profile, which profiles should I use to convert the wide gamut
RGB files to ensure the closest match to my Mac monitor with gamma of
1.8 and D65?

 For RGB photographic digital prints: Apple RGB, sRGB or sRGB1966 or
else?
 For CMYK offset printing (European standards): PS4 or PS5 default CMYK
or else?
