Greg,
You should just install Photoshop 7 using the upgrade disk skipping the 5.5
installation altogether. during the installation it should either ask you
for the original 5.5 CD and the original serial number, or just the 5.5
serial number.

Xpress is only an OS9 application, so runs under the 'classic' environment
on OSX. We do most of our design in Indesign now (an OS X application), so
we hardly use Xpress, but we've found that Xpress works ok under classic.
Xpress 5 is better under classic than 4. So long as you have a font
application that can handle the fonts in both OS X AND classic - font
reserve or suitcase come to mind you should be fine.
