You're not asking too much. You're just asking it of the wrong application.
For building profiles you want PhaseOne Capture One DSLR.
http://www.phaseone.com This one has an output option to "Embed Camera
Profile" which is easily stripped out via Photoshop. I assume profiling
applications ignore this embedded profile as well. (?)
Capture One DSLR will apply a default gamma ramp. No getting around that
one, but many feel this is, in fact, the correct approach for profiling.
Linear data from the camera is very dark indeed.
But, if you're hell bent on having linear data, then you want a program
called Bibble.
