I have taken a series of pictures (Olympus C-700) that a greeting card

things looked just great when I printed them out on my Epson C80 (using
colorsync). I use a Mac, 9.2 and monitor is MitsubishiDiamondPlus91.
So even with this equipment (surely not too high end) I thought I was

fine until the printer said everything was coming out gray at his end.

They are using Scitex and Heidelberg equipment, but
that's all I know about their process.
I would certainly be willing to bet you are supplying RGB files. Scitex
workflows (older ones, anyway, not sure about newer Creo stuff) love to
take RGB files and turn them into Grayscale.
I suggest taking your images and using the Photoshop menu Image: Mode:
Convert to Profile... to select U.S. Web Coated (SWOP) v 2. Then save
as a Scitex CT CMYK image. Give that to them and I bet they have far
fewer things about which to complain.
Hope this helps,
