It's better to leave it on the initial setting, especially if it's a
flat panel display. A profile will be automatically generated and
assigned to your display, usually named something like "Color LCD" on a
powerbook or "Apple Studio Display" on a recent flat panel.

I'm not sure what you did in Graphic Converter. I don't see an obvious
way to assign a source profile to an image...from the File->Edit Color
Profile menu item there's a way to choose either None or the embedded
profile as the source, but I don't see a way to assign another profile
as the source.

I played with a Minolta DiMage about a year ago, experimented with the
bundled profiles and found them, well, really bad. It sounds like
you're using the Match to chosen profile script correctly, you'll want
the camera profile as the source and Generic RGB or sRGB or something
similar for the destination.
