While its not often mentioned, Pantone's HexWare plugin for Photoshop will
seperate to any extra colors you define, not just green and orange. Your blue
plate will end up named "green", but it will be whatever color you specified.

Pandora/ImageWares has a Mac Photoshop color seperation plugin called Color
Corrrection Pro 2.0 that does what you want. <http://www.imagesware.com/>
