Doug,
JPEG and TIFF formats are pixel based formats and can only handle
images.
An EPS file is an encapsulated postscript file.
Vector data for example can only be described as eps or pdf. There for
illustrator files have always been eps (up to version 8) or pdf (since
version 8) with embedded private parts to keep them editable
eps formats with imagedata for example had to be used for duplex images
when working with xpress
But this changed a lot with the new apps from adobe so you can stay in
the native file formats and use them directly.

I always thought EPS was much more an Illustrator or Freehand format
for saving graphics out for placement into InDesign or Quark.
Has EPS lost some of its lustre in the days of faster machines, more
RAM, and CM?
